Chirimendo is a young red wine made from Tempranillo grapes from our own vineyards, hand-harvested and selected on a sorting table. The alcoholic fermentation of whole clusters is carried out using the traditional Carbonic Maceration method typical of Rioja, which includes the traditional foot-treading, just as our grandparents taught us. The treading is done by foot to gently release the must and extract the maximum aroma and flavor of fresh red fruit. It is a delicate and smooth wine, ideal to drink chilled as an appetizer in summer or to accompany poultry, red meats, stews, and game dishes. It is also ideal as a dessert wine.
